Tomates farcies au thon

Tuna salad — rillettes de thon in French — is a nice cold accompaniment to fresh summer tomatoes. This salad is made of thon germon (a.k.a. thon blanc, called "albacore" in North America), shallot, cornichons, capers, mayonnaise, and dried oregano. You can add some of the water that the tuna is packed in to thin the mayonnaise slightly and add more tuna flavor.


Butter lettuce and diced zucchini, along with green olives, are good garnishes.


At the last minute, we decided that some hard-boiled eggs (œufs durs) would be a good addition. And some fresh parsley that we have growing in pots on the front terrace. There's something old-fashioned-looking about tomatoes stuffed this way, but they tasted pretty good.

  2. That salad looks refreshing. We are having a brief heatwave too. In the mid 90s today in LA.

    A neighbor of ours is visiting Paris right now and was wondering whether she should bring fall clothes before she left, lol. Hope her hotel has A/C.

    1. In Paris you never know. I'd have suggested she brought fall clothes ALSO, just in case!

    2. It's not supposed to be as hot in Paris as it is in Saint-Aignan. We're expecting 32ºC tomorrow; Paris "only" 29. The advice I've always heard for travelers in Paris is to bring layers of clothes so that you can shed the superfluous ones if necessary.

  3. An early, bleary eyed glance at the first picture made me think you had been making cupcakes!
    Our tomatoes have done really badly, hardly any at all in fact, apart from a bowl of miniscule cherry toms. Such a shame.
    Your stuffed tomatoes look delicious.

    1. Hello Jean, did you have anybody watering the tomatoes while you were away? Walt has been diligent in keeping ours watered, at least minimally. Now they are producing, and pretty abundantly, considering the hot weather we've had. Me, cupcakes? Probably not.
