Summer is for salads


This is one of our favorite summer salads. It's diced raw zucchini and tomato, corn (or chickpeas), cooked green beans, chopped raw onion, and cooked millet (or couscous grain). The dressing is a vinaigrette made with white wine vinegar, Dijon mustard, and olive oil.


I think we forgot one ingredient — chopped green and red bell peppers.  I'll add some to the leftover salad today. Another good addition would be some diced feta cheese.

Accuweather predicts that our high temperature this afternoon will be 93ºF, and tomorrow's will be 94.

  1. temps are similar here this week & I have a house full of children & grandchildren....no ac upstairs either, but many fans....we do have the lake. I had been using the grill a lot but heat getting to me so looking for cold meals
    that everyone will eat! stay cool

    1. Kids don't mind the heat so much, I think. They can be picky eaters though. We make do with fans over here. It usually cools down in the evening and stays cool until about noon the next day. Right now, it's 93 on the terrace but only 84 or so in the house.

  2. We're going to 97 today. Your salad looks wonderful with or without the peppers.

    1. 97 is really hot. I remember spending 6 weeks in the summer of 1966 in Winston-Salem, well inland in NC. but not in the mountains. It was between 90 and 100 almost all of the time. In Morehead, on the coast, it was humid but not so hot, maybe 85. I was glad to get back home when the summer program ended.

  3. We're only going to 80 today, but we just had the remnants of Hurricane Hilary cruise through bringing wind and rain. Your salad looks wonderful for a toasty day.

    1. As predicted, it is 93F on our front terrace right now. I just came back from a saunter with the dog. It was too hot to stay out there for long.

    3. We got 7 inches of rain over the course of 24 hours. Some areas got 13 inches. We are fine, but some neighbors discovered their roofs need some help. They had lots of leaks.

  4. What a great looking salad. It was 61 this morning here in Seattle but will be 94 today at home in Florida. Try to stay cool.

  5. I think one of my staples each day is green or red peppers! Last night it was scrambled eggs, fried potatoes, zucchini and onions with grated cheddar over top once I plated it! And the peppers (!) I love couscous with vegies. Your combination sounds delicious, maybe for tonight here!
