It might still be warm where you live, but here in the Loire Valley the weather is autumnal. Yesterday we made soupe à l'oignon gratinée for lunch. That's French onion soup. I made it with Mozzarella cheese because that's what we had in the refrigerator. It turned out good, if I do say so myself. The secrets to a good onion soup are tasty home-made broth and slow-cooked (stewed) onions. In this case I had a liter of chicken broth and a pound of yellow onions. That made two generous bowls of soup. By the way, the melted cheese is delicious too.
I'm still having a lot of trouble typing. It's amazing how debilitating an injured little finger on your non-dominant hand can be. I wonder how long this injury is going to take to heal.
That soup looks utterly divine, perfect for the time of year.
ReplyDeleteI hope your injured finger heals up soon. I did something similar donkeys years ago and still have the scar. Fingers do take a long time to heal up in my experience.
Thanks for the warning about healing time, Jean. For the soup, I was pleasantly surprised that the Mozarella was so good with it. I just read that the kind of Mozza I had is 'traditional' and saltier and less watery than the little round balls packed in water in plastic bags.

ReplyDeleteFrench Onion Soup! Perfect for the beginning of cooler days in autumn. Looks delicious. I can taste that browned mozzarella. One of my favorite soups. The first week after I injured my finger I was watching it each day. After that week, I rather forgot about it and soon it was history. I hope the same for you, Ken. We have a lot of nerve endings on the tips of our fingers the nurse told me so it is not unusual that we feel the pain for a while as it recovers.
ReplyDeleteI have a VERY soft spot for french onion soup - and that looks lovely. I've not tried mozzarella but it's a great idea, the strings of cheese must have been fab. Hope your finger heals up soon!
