They are a prized vegetable, used in soups and as greens not only in the U.S., but in Brazil, Portugal, Egypt, and many other countries. I remember eating collard greens in Ethiopian restaurants in Washington DC nearly 30 years ago.

Emm, greens like collards, chard, and spinach freeze just fine after they've been cooked or blanched. When you grow collards or get them from a grower in season, you need to cook the whole batch (I bet I had a bushel) and either can or freeze them.

I'm looking forward to thawing and eating these from time to time with smoked chicken or sausages, and new potatoes.Ken Broadhursthttps://www.blogger.com/profile/04430899802705818716noreply@blogger.comtag:blogger.com,1999:blog-18071407.post-42782163642548192972010-04-30T05:15:33.488+02:002010-04-30T05:15:33.488+02:00How do you keep the cooked leaves? Spring collards have small, tender leaves. The heat of summer toughens the leaves and they grow much bigger. Either way, they are good to eat, if cooked right (i.e. long enough).Ken Broadhursthttps://www.blogger.com/profile/04430899802705818716noreply@blogger.comtag:blogger.com,1999:blog-18071407.post-88880568640408132992010-04-29T15:35:30.278+02:002010-04-29T15:35:30.278+02:00I will go with Anonymous :Collard green blossoms t...I will go with Anonymous :Collard green blossoms though the leaves do not look too "big"The Beavernoreply@blogger.comtag:blogger.com,1999:blog-18071407.post-7309546773538956262010-04-29T14:49:38.066+02:002010-04-29T14:49:38.066+02:00I would have had no idea, but, given your southern...I would have had no idea, but, given your southern routes, I'd guess collards, too :))

JudySeine Judeet (Judith)https://www.blogger.com/profile/07407353544376132484noreply@blogger.comtag:blogger.com,1999:blog-18071407.post-2206442184033186102010-04-29T14:21:06.153+02:002010-04-29T14:21:06.153+02:00Collard greens or mustard greens?
