I had cooked the first one after the Clément people plucked and gutted it for me, and it was good eats. Faced with a second pheasant, I thought about how I had scaled and gutted fish dozens and dozens of times when I was growing up on the Carolina coast, and I said to myself that it was silly to be afraid to try to clean and prepare a bird for the kitchen. I didn't want to take it to the Clément folks again because I didn't think it was right to have them do the job for free. At the same time, I didn't want to try to pluck the bird in the house — too messy — and temperatures outdoors were below freezing at the time. So I ended up throwing the pheasant in the garbage. When my daughter was in Avignon during her junior year abroad I visited her during Christmas break (30 days). She and I stayed with one of her teachers and Christianne insisted we share Christmas dinner with her and her visiting relatives. Her brother brought two pheasants he had hunted and I watched through my upstair's window as he did the plucking and cleaning outside her shed in the backyard!
