That's why I enjoy being in France so much.<br /><br />I guess a dish is described as <i>étouffée</i>, <i>une estouffade</i>, or "smothered" because the pot it's cooked in is tightly sealed. No air gets in and not much gets out. The dish a <i>daube</i> is cooked in is <i>une daubière</i> or <i>une braisière</i> (it's cooked on the embers and braised). The term <i>étouffoir</i> also exists for the same kind of cooking dish.
