Tha...I don't think the smell was from fermentation. That should have been complete before the choucroute was pakaged. Raw cabbage goes through two types of fermentation when it is transformed into choucroute crue. At that point the smell is quite fresh. <BR/><BR/>You should make your own when cabbage is inexpensive during the summer. It cans really nice.
