I always thought that, until I came here and started making my own dressings, bagels, etc. Do you think you can buy pimento cheese in the supermarkets there in St. Louis. You probably can. Or you can make it. It's simple, especially if you have a food processor for grating the cheese. I'm pretty sure that I remember hearing about it when I was young, in New Jersey. Trying to remember how and when, I remember, now, that when my mom used to sometimes buy pre-made finger sandwich trays for bridge club at our house (which didn't happen that often!), that one of the spreads was pimiento cheese. I never would have thought about it again, if you hadn't written about it yesterday.
