And very warmi...That looks very tasty [last pic]...<br />And very warming on a cold morning like this....<br />White celery has its stems either wrapped [old fashioned method] or buried as it grows [like earthing up your spuds] to blanch it... but there are new varieties that are self-blanching [they grow so tightly together that the inner stems are blanched by the outer green ones]... grown like that in the Fen country of Norfolk and Cambridge [UK]... gives a double crop... celery for soup and tinned green celery from the outer... nice white celery hearts sold as is.<br />There was an interesting Food Programme yesterday afternoon on the BBC Radio 4 about a revival of the old cooking of Charleston [SC] - use the BBC's Listen Again feature if you are interested...Timhttps://www.blogger.com/profile/16439261142732764451noreply@blogger.com
