But now I have more to say. My recent "sauté de veau" looked much like yours, except I only had green olives on hand. And the recipe name was "Sauté de veau corse," indicating the Corsican origins you mentioned. I love this type of dish (plats mijotés) but didn't really make any this year; maybe it was because of just three of us being at home.Betty Carlsonhttps://www.blogger.com/profile/17155852272383173880noreply@blogger.comtag:blogger.com,1999:blog-18071407.post-35274911809373935412009-05-19T18:06:00.000+02:002009-05-19T18:06:00.000+02:00Hi Sue, glad to hear your weather is nice in Dijon...Hi Sue, glad to hear your weather is nice in Dijon. It's sunny here in Saint-Aignan this afternoon too.

Hi Gabby too, I buy veal at the supermarket when it's on special. Several times a year I can get the rolled, tied, boneless veal shoulder roasts for €8.00/kg or so. Then it's worth it. That's what, $5.00/lb. or so...Ken Broadhursthttps://www.blogger.com/profile/04430899802705818716noreply@blogger.comtag:blogger.com,1999:blog-18071407.post-68277845345337894802009-05-19T17:24:00.000+02:002009-05-19T17:24:00.000+02:00Your veal dish sounded and looked absolutely divin...Your veal dish sounded and looked absolutely divine! Would that we could get veal shoulder here in the States. I haven't seen a veal roast of any kind for ages. Whole Foods occasionally will have some but at a king's ransom price.Gabbynoreply@blogger.comtag:blogger.com,1999:blog-18071407.post-46389036985475929642009-05-19T14:55:00.000+02:002009-05-19T14:55:00.000+02:00I have a cookbook from the 70s in Australia (calle...I have a cookbook from the 70s in Australia (called Australians Womens Weekly)that has a recipe for chicken marengo that looks like a very simplified version of this one. No fennel or dried mushrooms in Australia in the 70s! The sauce may have been made with Madeira wine and olives, but it definitely wasn't a roux.chmnoreply@blogger.comtag:blogger.com,1999:blog-18071407.post-90879487829126894922009-05-19T11:46:00.000+02:002009-05-19T11:46:00.000+02:00In one of my books I see a recipe for "filets aux ...In one of my books I see a recipe for "filets aux olives" -- in the plural. Those are steaks seared and then simmered in a sauce made with a roux and olives. It says you can do the same thing and use mushrooms instead of the olives.Ken Broadhursthttps://www.blogger.com/profile/04430899802705818716noreply@blogger.comtag:blogger.com,1999:blog-18071407.post-74763746411434021992009-05-19T07:36:00.000+02:002009-05-19T07:36:00.000+02:00I should not read your blog first thing in the mor...I should not read your blog first thing in the morning. Now I'm starved and it's only 7:30 a.m.!

Your veal with olives reminds me of a dish my grand-mother used to cook and it was "Filet aux olives", which is beef. If I can find the recipe I'll send it your way.chmnoreply@blogger.com
